Lucknow: Weeks preceding Christmas comprise plum cake season, making Dec most important month in the baker’s calendar, preparations for it beginning much earlier than most customers realise.Preparing a plum cake demands patience and planning. Bakers soak raisins, currants, candied peel and nuts in rum or wine as early as Aug or Sep, for them to mature over weeks, deepening flavour and texture. Investment too is made well in advance. “Money goes in months before it comes back,” says a baker in Sadar, gesturing towards stacks of wrapped cakes waiting to be dispatched. “Rising prices of dry fruits, butter and fuel have pushed costs up, squeezing our margins despite high demand,” he added.Yet plum cake remains a financial lifeline. For many traditional bakeries, Dec sales can account for 25 to 35 per cent of annual revenue. Bulk orders from schools, offices, churches and corporate houses keep ovens afire non-stop. Large round cakes and slab cakes are cut, wrapped, weighed and stacked late into the night. Labour costs rise, with extra hands hired for mixing, baking, slicing and packaging. Electricity bills spike, wood and fuel consumption increases, but the volume compensates. A successful season can offset lean summer months.Lucknow’s affection for plum cake goes beyond Christmas. The cake arrived with the British—its origins tracing back to English ‘plum puddings’ rich in dry fruits and wine—and found home in the city’s multi-cultural society. For many Muslim and Hindu families, buying a plum cake in Dec is as a seasonal ritual. Older bakeries guard recipes passed down generations, some relying on wood-fired ovens, temperature judged by experience rather than meters. “You can’t rush plum cake,” says a Hazratganj baker. As market evolves, bakeries are offering eggless, vegan and low-sugar plum cakes in smaller sizes and slice packs. Decorative tins, festive boxes and transparent wrapping have become part of the product, driven by gifting culture and social media visibility. Online delivery platforms handle a growing share of orders, forcing bakeries to standardise weights and improve shelf presentation without compromising taste.
